My Thoughts: My husband was vegan for a while and was quite enjoying it. The problem was that with our toddler son and myself not being vegan it was hard to figure out what to cook. I have no problem eating foods that are vegetarian or vegan, I just really like my meat and cheese. I want to support my husband when he is ready to go back to being vegan, as he found that it had some great health benefits for him. This cookbook is not completely vegan but it does have some vegan recipes, the rest are vegetarian.
I picked up this book thanks to a fellow bookstagrammer who had recommended it. She specifically talked about the black bean burger and my husband and I have been trying to find the perfect one, so I thought I would give this book a try. Unfortunately, for us the black bean burger is not something that will work out for our family as it does have peanut butter in it and my son is severely allergic to peanuts.
I really like a cookbook that has pictures for nearly all of the recipes as I eat with my eyes first, which I assume most of us do. Now that is not to say I won't make a recipe that does not have a picture but I do like to see what the recipe looks like completed. This cookbook does not have photos for nearly all the recipes. It does have them for quite a few though.
The cookbook is nicely sectioned up by recipe type, which also includes a whole section just on burgers. Even though the black bean burger won't work for us like I was hoping it would, there were a few that I was highly interested in. I actually found several recipes that I am hoping to make for my family over the course of time. It's just hard working full-time with a 20 month old to always be able to make a fully home cooked meal.
This cookbook does use quite a few ingredients that my family does not typically keep in our pantry. One of which is TVP granules. I actually had to look this up and luckily the cookbook has a nice introduction area where TVP is discussed as to what it is and how to prepare it.
Rating: 3 out of 5 stars because I really do appreciate a cookbook that has the very basic ingredients and has lots of pictures. I am definitely going to be making some recipes from this cookbook though.
